Rice -- oh how I love the many different ways to cook it. My favourite type is spicy shrimp fried rice. There are countless ways to cook fried rice -- it’s very popular in the Chinese cuisine. Normally, fried rice is made from cold rice that has already been cooked (left over rice). Here is my own version of fried rice.
Ingredients for boiling the rice:
5 cups of long-grain rice
1 box of chicken broth
2 tablespoons of curry powder
1 tablespoon of thyme
Salt
Additional Ingredients:
Vegetable oil
3 hot peppers
1 medium onion
2 garlic cloves
2 magi cubes
Curry powder
Onion powder
Thyme
Salt
1 bag of cooked shrimp
2 cups of frozen mixed vegetables
Wash the rice well to get most of the starch off and use the chicken broth instead of water to boil the rice. Add the curry powder, thyme and salt to the pot. Boil the rice until it’s almost cooked.
In a frying pan, heat up the oil and add the hot peppers, onion and garlic cloves. Fry well. Add the remaining spices and cooked shrimp.
Add the frying pan full of spices and shrimp to the pot of rice. Turn the heat on medium and give it a good stir. Add the frozen mixed vegetables. Cook for 10-15 minutes or until the oil has cooked into the rice.
Serve with some chicken.
