Banga Soup (Palmnut Soup)

Banga soup is distinct in flavour full in nutrients and made from palm fruit.  It’s a powerful natural anti-oxidant that helps in protection against cancer. It guarantees to give your skin a fresher look and lowers your cholesterol level, thus protecting against heart disease. This soup is one of my favourites because of its unique taste.


Ingredients:

1 can of palm concentrate

Large tomato
Medium onion
1 tsp Ataieko (this spice resembles dried seeds from peppers)
1 tbsp of dry red pepper
2 magi cubes
1 tbsp of crayfish spice
2 cups of beef broth
2 tsp of dry bitter leaves
Salt to taste


In a large pot heat the palm concentrate for 5 to 10 minutes on medium heat

Blend together the tomato, onion and ataieko spice very well.

Add the mixture to the pot. Add the dry pepper, magi cubes and crayfish spice. Cook well for 10 minutes.

Add beef broth, bitter leaves and salt to taste, cook for 5 minutes. Add meat and serve with garri or pounded yam.
