Prepare to indulge your taste buds with a finger-lickin' dessert. Did you know that butter tarts are considered one of Canada’s quintessential desserts? As far back as I can remember my mom was baking butter tarts -- which is the reason why I've never eaten a butter tart from the store. This dessert is sure to satisfy your sweet tooth (or possibly create a few cavities). Here is my mom’s secret recipe.
Ingredients:
4-5 dozen uncooked tart shells
½ pound of soft butter
3 ½ cups of yellow brown sugar
3 eggs
1 ½ cups of corn syrup
1 ½ cups of walnuts
Optional: 1 ½ cups of raisins & 1 ½ cups of coconut (I only use walnuts)
In a bowl, cream the butter and yellow brown sugar with a hand blender.
Add the eggs and mix until creamy.
Add the corn syrup and mix well. Stir in the walnuts.
Spoon the filling into the tart shells, about ¾ full.
Bake for 20-25 minutes at 325 F.
Cool before serving.
Note: I only made 2 dozen tarts so I halved all the ingredients.
